As I shared a few weeks ago, I have been really excited about the opportunity to start mastering madeleines. I bought all of my ingredients and got to work, starting with the first recipe in my Madeleine cookbook and determined to work my way through mastering them all. Trial #1 came out looking beautiful (i was so proud when I saw the tell-tale bump forming perfectly in the oven) but could not be swallowed. Trial #2 was also beautiful (though a bit less so – remember to flour your mould!) but this one tasted perfect! So proud! Now on to testing the different flavoured recipes.
