Weekly Food Challenge: Austrian Apple Streudel

This week’s food spotlight falls upon my family’s recipe for Austrian apple streudel – a recipe I used when making dessert for a recent lab lunch. This is a wonderfully comforting dessert and our version is especially healthy with no added sugar. Serve it hot right out of the oven either on its own, with vanilla ice cream or (even better) with freshly whipped cream.

1) Slice apples (and peel, I skipped the peeling and felt pretty guilty of my laziness) and place them in lemon juice to soak. For this relatively small streudel (8-10 small slices), I used 4 apples.
2) Strain the apples and mix in bowl with bread crumbs, lots of cinnamon, and raisins. (I also added dried cranberries.)
Place mixture in the middle of phyllo dough - leave enough room to wrap it in several layers of phyllo (about 10-15)

Wrap it. I also made a mini pocket streudel with left over phyllo and apple mix.

Stick it in an oven preheated to 300F - cook until golden
